1 c. oil
2 ½ c. sugar
3 tsp. vanilla
1 tsp. salt
¼ tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
3 c. flour
2 c. grated raw zucchini
1 c. chopped pecans (optional)
Combine moist ingredients except zucchini; mix, then add dry ingredients. Mix well, and then add zucchini and nuts. Bake in 2 greased and floured loaf pans at 325 for 60-70 minutes.
